Holding roughly 500 litres, the sherry butt provides a slower, more oxidative maturation style than smaller American barrels. Over years of ageing, the Spanish oak previously saturated with Oloroso or Pedro Ximénez sherry imparts deep, luxurious notes of dark chocolate, raisins, and spice.
